Instructions
  1. Coat chicken in olive oil and seasoning and set aside for one hour.
  2. Place checken in a pan over medium heat and saute until cooked through. Remove chicken from pan and add garlic and butter, heat for about a minute. Deglaze pan with wine. Add tomatos and saute until tender.
  3. Add cream, stock, salt and pepper. Return chicken to pan. Simmer on medium heat until cream is incorporated and reduced, about 15 minutes. Add spinach and cook for another 5 minutes. Remove from heat and add parmesan.
  4. Serve over pasta.
