Ingredients
Chicken Marinade
- 2 Chicken breasts split in half
- 2 Tbs olive oil
- 2 Sazon packets
- 1 Tbs Italian seasoning
- 1 tsp salt
Sauce
- 1 Tbs Tbs Oil
- 2 Tbs Tbs Butter
- 2 Tbs garlic
- 1/2 Cup white wine
- 1-1/2 Cups cherry tomatos halved
- 1 Cup cream
- 1 Cup chicken stock
- salt & pepper to taste
- 1 Handful Fresh Spinach
- 1/3 cup Parmesan cheese

Instructions
- Coat chicken in olive oil and seasoning and set aside for one hour.
- Place checken in a pan over medium heat and saute until cooked through. Remove chicken from pan and add garlic and butter, heat for about a minute. Deglaze pan with wine. Add tomatos and saute until tender.
- Add cream, stock, salt and pepper. Return chicken to pan. Simmer on medium heat until cream is incorporated and reduced, about 15 minutes. Add spinach and cook for another 5 minutes. Remove from heat and add parmesan.
- Serve over pasta.
